In a large bowl, cut and prepare: shrimp, onion, garlic, tomatoes, jalapeno, Serrano, cilantro, mango. Once you have done that, stir together lightly.
Squeeze the orange, lemon, and lime juices in to the shrimp mixture, add the avocado last to prevent it from turning brown. Drizzle the olive oil. Toss with the cumin and salt and pepper to taste.
This can be served in a cocktail glass garnished with a slice of lime along with a sprig of cilantro and eaten with a salad fork or in a bowl with tortilla chips on the side. Yummy!

Trio Tomato Caprese Skewers with Basil Vinaigrette
To assemble the skewers:
Gather 18 of your choice of large toothpicks or other small skewers to use.
Place tomato, basil, then mozzarella. Continue until you have assembled them all. Arrange them on a small serving platter.
To make the basil vinaigrette:
In a food processor add, 7 large basil leaves, lemon juice, shallot, salt, pepper, local honey, and three tablespoons of the olive oil. Blend and slowly add the remaining olive oil until the dressing becomes emulsified. It will be creamy and a bright green color.
Drizzle over the plated skewers and serve immediately. Add the remaining dressing in a small bowl on the side for dipping.
