  1. In a large glass bowl or stand mixer, blend vegetable oil, pumpkin, eggs and sugar. Mix well.
  2. Slowly incorporate flour and remaining dry ingredients. Stir just until mixed.
  3. Fold in walnuts and dried cranberries.
  4. Lightly coat bread pan with non-stick spray.
  5. Bake at 350 degrees for 45-60 minutes or until top is lightly golden and toothpick comes out clean.
Recipe Notes

Allow to cool prior to slicing for best results. 😉
