For all of you that have been asking, I’m finally starting to be able to catch up a bit and have some time to share this Key Lime Fudge recipe with you. The original recipe was for half the amount…yes half…and when is half the amount of fudge ever enough for anyone? Exactly! That is why I doubled it. Ha!
And for those of you who have never tasted Key Lime Fudge…it is light, refreshing, and creamy with just the right amount of rich fudgy goodness. Plus, it is so simple to make! Merry Christmas Y’all!
1/4cupskey lime juiceOk to use regular limes if you cannot find key lime juice

Line a 9"x13" inch glass pan with aluminum foil. Spray with coconut oil, making sure to cover the entire surface.
Combine first 3 ingredients in a large heavy duty saucepan over medium heat. Bring to a boil for 8 minutes, stirring constantly.
Remove from heat and add remaining ingredients, stirring until smooth. Pour fudge mixture into prepared pan. Allow to cool completely on the counter. At least 1-2 hours. Times may vary for your fudge to set properly.
Once fudge is completely set, remove the hardened fudge with the aluminum foil from the pan and place on the counter or cutting board. Cut into 1" squares.

The mix has green split peas, yellow split peas, barley, lentils and pasta and is ready to add whatever seasoning that you like to make it your own.
Put all of the ingredients into the slow cooker which has been set to high setting, stir until well mixed. Cook for 1 hour on high then turn down to low for remaining 3 hours. Cook lentils until desired tenderness.
