  1. Using a large stock pot, render the bacon ends and pieces until fully cooked and crispy. Do not remove the bacon or the grease. 😉
  2. Add next four vegetable ingredients to the bacon and stir well. Coat all of the veggies with that yummy bacon grease.
  3. Pour boiling water over this mixture until just covering the potatoes.
  4. Next, pour the evaporated milk in and give it a good gentle stir.
  5. Season the chowder with the herbs, salt and pepper to taste. Cover and bring to a gentle simmer for 30-45 minutes until the potatoes are fork tender.
Recipe Notes

Feel free to substitute the evaporated milk for coconut milk for those with lactose issues. 🙂

Who does not like roasted chicken? There are a gazillion (yes that many) ways to prepare and cook chicken. No need to be bored with the same ole recipes. Cornish game hens are so cute and deliciously tender. Surprisingly very affordable for families on a budget too. I think that these little Marmalade Cornish Hens just might become my “signature” dish. And maybe yours too?

  1. Prepare in a small bowl herbes de provence, salt and pepper. Mix together. Use this seasoning to season the inside cavity of the Cornish hens. About one tablespoon of mixture per hen.
  2. Place sliced oranges and onion in a cast iron Dutch oven. Drizzle a little olive oil and sprinkle with seasoning mixture. Get your hands in there and mix it up well until all is coated evenly.
  3. Arrange the Cornish hens on top of the orange and onion slices in the cast iron Dutch oven.
  4. Melt the orange marmalade in a small saucepan on medium heat. About 5 minutes.
  5. Pour over the hens.
  6. Sprinkle again with seasoning mixture.
  7. Cover and Bake in a 350 degree oven for 1 hour or until golden brown and juices run clear.
Recipe Notes

To serve:  Carve each Cornish hen in half to equal one serving. Add a side of praline sweet potatoes and your meal is complete!
