  1. Using a large stock pot, render the bacon ends and pieces until fully cooked and crispy. Do not remove the bacon or the grease. ūüėČ
  2. Add next four vegetable ingredients to the bacon and stir well. Coat all of the veggies with that yummy bacon grease.
  3. Pour boiling water over this mixture until just covering the potatoes.
  4. Next, pour the evaporated milk in and give it a good gentle stir.
  5. Season the chowder with the herbs, salt and pepper to taste. Cover and bring to a gentle simmer for 30-45 minutes until the potatoes are fork tender.
Recipe Notes

Feel free to substitute the evaporated milk for coconut milk for those with lactose issues. ūüôā

For all of you that have been asking, I’m finally¬†starting to be able to ¬†catch up a bit¬†and have some time to share¬†this Key Lime Fudge recipe with you. The original recipe was for half the amount…yes half…and when is half the amount of fudge ever enough for anyone? Exactly! That is why I doubled it. Ha!

And for those of you who have never tasted Key Lime Fudge…it is light, refreshing, and creamy¬†with just the right amount of rich fudgy goodness. Plus, it is so simple to make! Merry Christmas Y’all!

  1. Line a 9"x13" inch glass pan with aluminum foil. Spray with coconut oil, making sure to cover the entire surface.
  2. Combine first 3 ingredients in a large heavy duty saucepan over medium heat. Bring to a boil for 8 minutes, stirring constantly.
  3. Remove from heat and add remaining ingredients, stirring until smooth. Pour fudge mixture into prepared pan. Allow to cool completely on the counter. At least 1-2 hours. Times may vary for your fudge to set properly.
  4. Once fudge is completely set, remove the hardened fudge with the aluminum foil from the pan and place on the counter or cutting board. Cut into 1" squares.
  5. Makes about 2 pounds of delicious fudge.
