Pecan Pie Bars

As if pecan pie wasn’t enough, we had to go and make a bar cookie out of it! LOL

My favorite pie in the Universe is Pecan Pie. Being from the South, I’m sure that is not too surprising. So when I received 2 pounds of fresh Texas pecans from a local fundraiser, I knew that making a pecan pie would be on the menu. Pecan pies are already simple to make but when you transform it into a bar cookie recipe, there is no rolling out or trying to get the perfect pie crust. Just a beautiful shortbread style cookie base. Oh my gosh, Y’all. So good!1

Ingredients
Shortbread crust bottom
Pie filling
Servings: 9"x13" pan

Instructions
  1. Combine first three ingredients: flour, brown sugar, butter. Cut in butter with a pastry blender until crumbly in appearance. Press mixture into a prepared 9"x13" pan.
  2. Bake crust in a 350 degree oven for 15 minutes or lightly golden brown.
  3. Mix remaining ingredients in a bowl. Pour over browned shortbread crust. Continue baking in oven for an additional 30-35 minutes until set.
  4. Allow to cool completely prior to cutting into bars.

  1. In a large glass bowl or stand mixer, blend vegetable oil, pumpkin, eggs and sugar. Mix well.
  2. Slowly incorporate flour and remaining dry ingredients. Stir just until mixed.
  3. Fold in walnuts and dried cranberries.
  4. Lightly coat bread pan with non-stick spray.
  5. Bake at 350 degrees for 45-60 minutes or until top is lightly golden and toothpick comes out clean.
Recipe Notes

Allow to cool prior to slicing for best results. 😉
