  1. In a large glass bowl or stand mixer, blend vegetable oil, pumpkin, eggs and sugar. Mix well.
  2. Slowly incorporate flour and remaining dry ingredients. Stir just until mixed.
  3. Fold in walnuts and dried cranberries.
  4. Lightly coat bread pan with non-stick spray.
  5. Bake at 350 degrees for 45-60 minutes or until top is lightly golden and toothpick comes out clean.

  1. Combine ingredients and stir well. Drop mixture by rounded teaspoonful on a parchment lined baking sheet.
  2. Bake at 325 degrees or until macaroons are slightly golden. Cool on wire racks.

This recipe does better when the egg whites are just about at room temperature.ย Don't be in a hurry. ๐Ÿ˜‰

Other variations:Try drizzling or dipping them in chocolate after baking or adding mini-chocolate morsels into the batter prior to baking.
