  1. Clean and scrub mushrooms. Separate caps from stems. Place caps in a 9x13 glass baking dish that has been sprayed with non-stick spray.
  2. Blend mushroom stems and shallot in food processor. Sauté mushrooms and shallot in a skillet with butter.
  3. Add the spinach and cook until fully wilted.
  4. Mix thoroughly in a bowl with cheese, egg, panko, and spices until well blended.
  5. Fill mushroom caps with stuffing mixture. Top with a little more cheese. Bake in a 400 degree oven for 20 minutes.

Roasted Red Pepper and Garlic Hummus

and a few other ingredients equals? Love. It equals pure LOVE!

Or at least for me. I adore hummus so much that we all joke about the fact that I can eat it for pretty much any meal. And I have been known to harass my parents and say that the reason is because they are “Old Austin Hippies” and that is why I like the things that I do. Well, I do not know how much truth there is to that…but it is funny.

This Roasted Red Pepper and Garlic Hummus is so lick-your-fingers good you may want to make it every week. And do not worry.  If you do not like red peppers, just omit them completely and add what you prefer. Perhaps more garlic, or other spices like cumin or make it  Mediterranean style with Kalamata olives. You will L-O-V-E this hummus!

  1. Prepare a 16 ounce bag of dried Garbanzo Beans according to the package directions. Allow cooked beans to cool for 1 hour. Drain liquid, reserving for use in blending the hummus if needed.
  2. Add all ingredients except parsley into Cuisinart. Adding reserved liquid from garbanzo beans as needed.
  3. Blend until smooth texture.
  4. Pour into bowl. The hummus will still be slightly warm. Top with the extra red pepper slices and parsley. Drizzle with olive oil. Serve with sliced veggies or flat bread of your choice.
Recipe Notes

When using the bag of dried Garbanzo Beans, there will be enough to do two batches of this hummus. Just save the other half in an air tight container in the fridge for up to 5-7 days.
